On the Spec sheets, I don't see what the difference is in these two parts, 24LC08B/P & 24LC08B-I/P.

Hello there,

24LC08B/P refers to the general use of the device, and the "I" on 24LC08B-I/P stands for Industrial temperature range, from -40°C to +85°C.
