Basically we are trying to regulate ceiling fan speed with ESP8266 but it is making humming sounds. Can you please suggest me any technique to reduce those sounds?

this sounds similar to the humming sound you get from using dimmers with LED and dim-able CFLs. Are you using PWM to regulate the speed or another method? If PWM it might be possible to change the frequency and get the sound out of the audible range.
I don't do a lot with AC but I have had similar issues with DC motors using PWM to control the speed. Even at 20kHz PWM there is still an audible whine that I would like to get rid of

i think it would be nice if you remove pwm and add capacitor based speed regulation. it will not be linear though.
